Giant Tomato


My husband came home last night with quite a few tomatoes from his brother's garden. Among them were two very large ones, but the one pictured here was the GIANT. Look at the size of that thing next to the largest potato I had!

Not to mention he had brought home about 10 more 2 days ago. What am I going to do with all these tomatoes?....Stay tuned.

  1. Ah yes, nothing like homegrown tomatoes in the summer up there. I do miss that. My mom would serve them in slices at lunch, and we would have a lot of BLTs for dinner. She hated using her oven in the heat of summer.

  2. you can sautee any veggies with onion, garlic, and diced tomato.

    also it's good just sliced with salt, freshly squeezed lime, and a drizzle of olive oil. or in salads (omg like sometimes i love to just cube cucumber, tomato, onion, and toss with olive oil, salt, and leon, then add some dried oregano, and toss with some feta cheese kinda greek inspired haha)

    gazpacho is very refreshing and easy too

    you can use them in sofrito's for bean stews (I just grate them or dice and let it reduce a lot)

    It's really endless a lot of what i cook, specially Mexican and Spaniard food will use fresh tomato.

  4. @ Didi Menendez: Yuck I've heard of "Dulce de Tomate" sounds gross lol. with cream cheese ha ha.

    @I.M. : I forgot to tell you another good way to use up tomatoes if you have to many is to make this SUPER SUPER SIMPLE AND QUICK yet real delicious "Tomato and Egg" dish (it's chinese) takes about like 5-7 minutes to make at most, and is super tasty I love it with some white rice in the morning here's the video I learned it from:

  5. if your familiar with Spaniard food, make some "Tortilla Guisada" or "Pisto" you should be able to go through them :)

  6. Thanks for the suggestions. Actually I made something that will be posting tommorrow, but I still have plenty of tomatoes left, so I'll be make making more tomato recipes this week. I liked the video of the Chinese recipe Nathan, I may try that, but a smaller portion.
