Meatless Monday: Black Bean Veggie Burger with Plantains and Avocado

I have been thinking of trying something like this for a while. I have seen modern chefs preparing steak sandwiches with plantains, and it ocurred to me to create this vegetarian Cuban flavored sandwich. I thought it was very tasty.

Black bean veggie burgers
ripe plantains, fried (mine were still a little yellow, but they worked out well)
avocado, sliced
red onion, sliced
hamburger buns

I used the Morning Star Spicy Black Bean Burger which I thought went well with the combination and the black beans make it so Cuban.

I grilled them in a little olive oil with some onions and sprinkled on some seasoned salt.

I fried the plantains and sliced the avocado.

I toasted the buns and started layering.
Finished it off with a little ranch dressing. Yum.

  1. I gotta try this one! Never thought about something like this but looks just too delicious to pass up. When are you going to start writhing the "Ivonne Bess Blueprint to Contemporary Cuban-American Cooking"? XOXOXOX

  2. That's one long title, but sounds important. LOL. I'm sure you would prefer this burger with real beef, and I know you already put avocados on your burger, so add some plantains and see how you like it.

  3. I have two ripe plantains now just waiting to be used, and two avocados....perfect now I just need the blackbean burgers! Sounds good!

  4. I love Boca burgers! and I miss them dearly. But I have come across a few recipes where you can make them from scratch, but I have yet to try it. (yes I'm lazy) plus with a toddler I need something quick so I usually just cook the pinto beans from scratch and make refried beans.

I miss avocados as well.....awwww to be a vegetarian in the country of meat eaters..LOL

  5. I'm going to look into making veggie burgers from scratch, and if I find a simple recipe I will try making it.
I can't believe you cannot find avocados. Is the climate in Croatia not suitable for growing them?
I imagine that you may have a hard time surrounded by those meat eaters. Good luck.

  6. This looks sooooo yummy! What a great idea!

  7. Sharline, I thought to myself .... I like the combination of black beans, plantains and avocados, so why not put them together?
