That looks delicious, I wanna make it sometime! :) my guess it's prepared the same way as any basic yellow rice dish , like has a good sofrito, some coloring like bijol or saffron or colorante, short-grain rice, a good seafood stock, and jus having the knowledge on how to get the seafood cooked to perfection without over cooking incorporated into the rice and being able to make the flavors meld together. And of course she used Asparugus as a garnish YUM! I could see oregano in there generously used too.
