Instant Replay: Yucca Chips


I repeated my recipe for black bean dip and yucca chips this weekend. The yucca I bought this time was much larger and I ended up with an abundance of chips.  Click here for the recipe.
(I made the dip with canned beans this time.)

  3. Omg I.M. I just thought of something so like you know you have a lot of leftover Yuca chips (or "over abundance") like you can make like a "SOpa de Yuca" you know like the same way you make "Sopa de Platano" (like with the plantain chips all ground up, then you sautee in olive oil some onions and garlic, and stock or broth, bring to boil season with cumin and salt and thicken with ground up plantain chips, you can do the same with Yuca chips I bet!)

  4. LOL Nathan, I've never made sopa de platano, and had no idea it could be done with chips, but the "abundance" did not last past the second day.

  5. I tried Yucca! for the first time! My brother-in-law is from the island: Dominica and he always has it at home. I tried it baked. Texture was a bit like potatoes and I like it. I can't wait to share this recipe with my sister so she can tell her hubby to make this for us.

  6. I've never tried it baked, never even thought about it, but now, I'm curious. I'm glad you tried something different that you liked. The chips are yummy, and you really need to try to black bean dip (it takes only a few minutes of you use canned beans)... I'm sure you'll love it!
