Too Hot to Cook

It's been unusually hot here for the past three days with the temperature hitting 92 today, and it doesn't seem like it's going to cool down anytime this week. I've decided to take a break. I have plenty of frozen leftovers from all the cooking I've been doing so I won't be posting for a few days, but I'll be back soon. See you then.

I was thinking of you today because I bought a can of coco rallado en almibar and I was looking up recipes, the simplest would be pastelitos de coco, but I could also make coquitos or, my dear, if you have a recipe I will attempt flan de coco???? (don't know if this is the right coconut for that)

  3. Hi, Ivonne, actually, it is not. You need coconut milk for that, and kind of surprisingly, Martha Stewart (www.marthastewart.com) has a great recipe for coconut flan that I have made several times and comes out really good. What you can also do, though (I love it this way too!) is to make regular flan and top it with coco rallado when you serve it. That's the way I eat my flan at all Cuban restaurants in L.A., Miami and even in Havana.

  4. By the way, coconut milk can be found at either Hispanic or Asian markets or those markets that have an "ethnic foods" isle. Goya brand has it in a can, as do most of the other brands (in ca can, that is). Hope this helps. Kisses.
